Alright let’s all be honest here: some nights I end up making a PB&J because I’m too damn tired to create a magical meal that covers all of the healthy food groups. And let me also own up to the fact that meal prepping has never seemed like a fun idea to me. Don’t get me wrong, I love to cook! But spending four hours on a Sunday to cook three or four meals for the week? I’d rather do something else. However, I’ve started doing something new with my life that I’m very excited about: I’ve started seeing a nutritionist. I’ve recently written about my life in therapy, which I have to admit was very cathartic. It was amazing to share those moments with a bigger audience than just some select family members.

Honestly, this is super simple and easy. Best part is, you only need to use one pan! This is what I call one of my ‘go-to meals’ because I really only need to buy three things at the store. Plus, it’s healthy and tasty no matter now you make it.

I have to admit that one of my new obsessions when cooking is quinoa. I can’t believe I stayed away from it for so long! And honestly, this burrito bowl recipe makes it all amazing. My love for Mexican food has grown since moving to Miami, so it makes sense that I would want to put this on this list.

Now I know what you’re thinking because I was probably having the same thought. I was a little hesitant at first to try these because of the mixing of mango with brown rice and black beans. But it’s actually SUPER DELICIOUS! These are also super quick to make, which makes it a good one for the work week.
Rosemary Chicken Noodle Soup from Gimme Some Oven
So I really thought I would never be making soup again unless it was Gazpacho. However, this rosemary chicken noodle soup is perfect for the crazy rainy days we’ve been living through this past week. It also reminds me of home as my mom always goes and makes chicken noodle soup whenever it rains, snows, or she hears anyone has a slight sniffle.
Caesar Salad with Steak
Listen, not all salads are created equal and as a major fan of the caesar I make it pretty often. However, I hate when I have the same thing over and over AND OVER again! So I like to mix it up with the protein I decide to add. Sometimes it’s shrimp and other times it’s chicken. But I think my favorite version is with steak! I just buy stew meat (I know), season it and throw it in the oven while I put the rest of the salad together and presto! Dinner complete.
